Zenmai (flowering fern) stew | Our Regional Cuisines
RECIPE
Ingredients (serves 4)
- dried zenmai fern 100g (turns into 350g when rehydrated)
- dashi soup stock 2 cups
- soy sauce 3 tablespoons
- salt 1/2 teaspoon
- sugar 1 tablespoon
- mirin 2 tablespoons
How to cook
1. Put the zenmai into a pot, add plenty of water. Bring the water to a boil and simmer over medium heat for around one minute.
2. Remove the zenmai from the water immediately, and change the water for about 3 times over half a day to remove the scum.
3. Pour in the dashi broth and the zenmai into a pot, bring it to a boil. Add sugar and cooking sake, cover with a lid and simmer for around 2 to 3 minutes.
4. Add mirin, salt, and soy sauce, and then cover again with a lid and simmer for 5 more minutes. Turn off the heat and let the flavors soak.
